Spiced Parsnip Soup

A lovely, warming soup when you need a hug in a bowl on a crisp, autumnal day. Even better served alongside a good book!

Ingredients:

  • 1 onion

  • 1 celery stalk

  • 2 carrots

  • 500g parsnips

  • 1 tsp garam masala

  • 1 tsp paprika

  • 1 litre veg stock

Fry the onion and celery in oil until softened.

Add the carrots and parsnips (roughly chopped) and fry for 10 mins or so until also soft.

Add the spices and cook for 1 minute.

Add the stock, simmer for 15 minutes and then blitz until smooth.

I also roast some of the parsnip skins in the oven until crispy to pop on top.
