Souper Green Soup

This is our go-to when we’re feeling a bit under the weather, served with hunks of buttered sourdough (because it’s all about balance, right?).

Ingredients:

  • 1 onion

  • 1 leek (white part only)

  • 2 celery stems

  • 5 garlic cloves

  • 1 tsp all spice powder

  • 1 tsp cumin powder

  • 2 medium potatoes

  • 1 broccoli

  • 1.5 litre veg stock

  • 250g kale

  • 250g spinach

  • 200ml double cream

Roughly chop the onion, leek, celery and garlic. Sauté in oil until softened.

Add the spices, cook for 1 minute.

Roughly chop the potatoes and broccoli. Add to the pot with the stock, salt and pepper and simmer until tender.

Remove from the hob. Add the leafy greens and blitz until as smooth as possible.

Stir in the cream and serve - I like to drizzle with oil and cream - enjoy!
