Squash, Coconut and Chilli Soup

One of my favourites when you need a good kick. So easy to make, a one-sheet wonder.

Ingredients:

  • 1 pumpkin or squash

  • 1 onion

  • 2 garlic cloves

  • 2 red peppers

  • 2 red chillies

  • 1 tin of coconut milk

  • 1 bunch of coriander

  • 1 lime

  • 500ml veg stock

Chop the pumpkin or squash and onion and add the garlic cloves (still in their skin), chillies and red peppers (sliced) to a baking tray.

Drizzle in oil and roast for 25 minutes.

Add to a large pot, add the veg stock, blitz with a stick blender and reduce.

Add the lime juice and coconut milk, take off the heat and stir through.

Serve with chopped coriander, another drizzle of coconut milk and chilli flakes.

(and lots of bread!)
