Is it just me that’s in an infinitely better mood with all of this SUN? Blue skies galore this weekend Veg Boxers!
With Easter just around the corner and the clocks springing forward next weekend, we have high hopes of being able to leave our ‘big’ coats at home very soon!
We are dreaming of alfresco lunches with friends, surrounded by tulips, daffodils and the smell of a freshly cut lawn as we find the time and daylight to get into the garden, pitchers of iced tea (topped up with Prosecco if you’re my friends!), fresh salads, seasonal veg dishes and perhaps a perfectly cooked, Moroccan spiced lamb.

Spring Beetroot Salad
It’s no secret that Melissa Hemsley is one of our favourite chefs and what’s great about her recipes is that you can almost always substitute ingredients for what you have to hand. This yummy salad of roasted carrots, onion and chickpeas with quinoa and beetroot is a regular feature at our barbecues.

New Potato Salad
You can’t go wrong with a new potato salad. We love ours with red onion, tons of herbs and just a coating of mayo.

Garlicky, Lemony, Asparagus
In our opinion, with the Vale of Evesham on our doorstep, asparagus deserves a dish of its own. Roast it up with lemon zest, garlic and olive oil and you’re onto a winner. It’s in our add-on section now - add to your basket here.

Moroccan Spiced Lamb
Lastly but not leastly! We get all of our meat from David Moore, not only because it’s local, but also because it’s the best.
